Franco and Lindy's Newsletter - September 2007
Franco and I have just come back from Cardiff where we have been part of a judges’ panel for two days for Wales the True Taste, Cymru y Gwir Flas food and drink awards, at the Millennium Stadium. I think collectively the judges sampled over seven hundred products and among them some very impressive tastes indeed. More than that we cannot say as everything is very hush, hush until the awards ceremony in November.
What a joy to have some beautiful September days after this extraordinary summer of ours. Hopefully many of you will be enjoying the many food festivals on this month particularly Abergavenny with its wide ranging program of events taking in well known writers, journalists, chefs, experts and the stars - the produce, from the many faceted world of food.
It’s such an exciting time of the year with the pick of the autumn and winter crops to come, everything from foraged mushrooms, sloes, blackberries, rosehips and Hawthorne berries, to fields of pumpkins and marrows, orchards of apples and pears, woodland pheasant and partridge and wonderful meat produced after the summer’s grazing.
Franco and I have a new program of cooking days lined up featuring all of these. (don’t forget to check out our recipe of the season mushroom crostini) We shall be starting in September with Autumn pickings with a robust menu of Cannelloni stuffed with wild mushrooms and Parma ham, Guinea Fowl with grapes, Grilled figs with mascarpone and to nibble on Crostini with white beans and sage and honey cantucini.
In October we invite you to join us on our annual weekend in the kitchen when we shall be cooking some of the specialty dishes that made Franco’s name, including delicious Brodetto, ravioli stuffed with pumpkin and limoncello and grappa tart. There are more monthly dates running through to the end of 2008 including game in November 2007and Christmas cooking in December 2007; always very popular so book early to avoid disappointment.
Our bespoke team building events go from strength to strength and not just in the professional and business sectors. Cook with love, cook with your soul but IF YOU CAN’T STAND THE HEAT GET OUT OF THE KITCHEN - who will be Franco’s apprentice? has attracted a wider audience as a celebration with a difference. A unique event can be set up to suit you, any time; weekday, evening or weekend. How about a Christmas party with a difference?
One last thing if you have special dietary requirements, such as vegetarian, celiac etc please don’t be put off as we are happy to slot in extra recipes to any of our regular cooking days just for you.
